A complex aroma of autumnal fruits (blackberry, apple, pear), almonds and brown butter.
Texture:
An elegant, golden, balanced champagne with an exquisite mousse and long after taste with hints of fruits, nuts, citrus and floral (bloom, mimosa) tones.

Harvest:
The highest quality Chardonnay grapes are hand picked to en¬sure that only ripe grapes that will yield a high proof champagne with a rich aroma are selected.
Pressing:
6000 kg wine pressed. Only the “first press” vintages are selected for this vintage wine.
Ageing process:
6-7 years in our cellars
Fermentation:
9 months in oak barrels. The fermentation is performed without malo-lactic fermentation. Drawing is done in February then it is chilled and filtered.

With a superb long after taste and continually developing flavour, this champagne truly is an excellent performer and companion for many dishes especially caviar, shellfish, fish, poultry and mature cheeses. Lobster and fois gras provide those luxury companions this champagne deserves. For such great performing champagne, it will also come as no surprise that it is also an excellent aperitif.
