Genetics:

60% Pinot Noir 40% Chardonnay

Nose:

A clean fresh scent with hints of citrus, minerals & yellow apple.

Texture:

Pale gold in appearance and a very pleasant mousse, tastes of grape¬fruit, bitter almond and brioche rounded with hints of minerals.

Vine:

Premier Cru Hautvillers and Cumières.

Soil:

Limestone

Vine Age:

30 years

Harvest:

By hand. Strict selection on the vine stock to obtain an optimal maturity, a natural high proof and blooming aromas.

Ageing process:

4 years in our cellars.

Fermentation:

Temperature controlled stainless steel vats are used. Alcoholic fermentation is maintained at 16° proof to preserve the wine’s aromas. The fermentation is performed without malo-lactic fermentation. Drawing is done in February then it is chilled and filtered.

6g/l.

Suitable with:

With a long after taste and developed flavour, this champagne compliments fish, poultry, shellfish and even caviar or bleak roe. Its well balanced taste also ensures it is an excellent aperitif.
